Well, here is guess. Ice sublimes slowly in a freezer and I would guess the
surface of an ice cube does not have a uniform energy. I would assume that
the more energetic water molecules sublime first, leaving behind the less
energetic ones. These "low energy" water molecules may end up looking like
stalagmites.
